We started making today’s Minestrone soup at 7 AM, the same way we always do — from scratch, slowly, and with care. Right at the end, the bottom caught a burn and the soup picked up a charcoal taste.![]()

We stood there debating it… and then did what we always promise ourselves we’ll do: we threw the whole batch away. No shortcuts. No “maybe it’s okay.” If it’s not right, we don’t serve it.![]()
